Fit-chef: Gordon Ramsay's Fast Food

A big fan of Gordon Ramsay's television show Kitchen Nightmares, recently I picked up a copy of his cookbook, Fast Food. Many of the recipes are waaaaay over my head in terms of prep and ingredients. But I tried out his Pan-fried Hake dish the other night and it was the perfect trifecta: easy, delicious...and really healthy. I'm definitely adding it to my rotation of light dinners for 2009--next time I'll use less olive oil than the recipe calls for. (And next time I'll take a pic of my finished masterpiece, you'll have to trust me that this looks colorful and yummy on the plate!)

Here's the recipe:

Ingredients
12 ounces Hake fish (I used cod)
1 cup quartered plum tomatoes (I halved a small carton of cherry tomatoes)
4 stalks of green onions, chopped
1 handful of cilantro, chopped
3 tablespoons olive oil

Instructions
1. Put 2 tablespoons of oil in a cold pan. Place the fish filets in the pan, skin side down. Turn the heat to low and cook for about one minute. Raise the heat to medium-high and cook another 2 minutes, until the skin is golden and fish is cooked about 2/3s through. Flip the fish and cook on the other side for 90 seconds (and no more!).
2. Place the cooked fish on a plate with paper towels and keep warm.
3. Add the tomatoes and green onion to the pan with the last tablespoon of oil. Cook for about one minute and then add the cilantro. Cover the pan and cook for another minute.
4. Place the fish atop the tomato salad on a plate and serve immediately. Serves 2 hungry people. Posted by Liz
